Cooking a whole hog is a spectacle!
The traditions of whole hog BBQ come from South Carolina USA. In keeping with those traditions we base our techniques on the way it has been done for centuries. Simple block pit construction using coals shoveled from a burn barrel to create a truly low and slow cooking experience.
Well we have modernised this concept with our custom made portable steel BBQ pits. This means we can provide butterflied whole pigs lovingly seasoned and mopped with our signature sauce creating the most delicious pulled pork you have ever had.
Each mouthful has some belly, some ham, some shoulder all mixed in together, smoked low and slow for 18-24 hours with all the juices dropping onto the coals adding flavour notes from the smoke that cannot be replicated.
It truly is a labor of love as a whole hog can take up to 24 hours cooking time. Constantly monitored, keeping the temperature right, the fire going… its a very labor intensive process but the results are totally worth it.

Just imagine arriving at an event to be greeted by the tantalising smell of smoke and slow cooked BBQ meats wafting in the air.
You come up to the pit where you can see the pig cooking away. You reach in and pull off a tasty morsel to start your culinary experience.
As you settle in to the event you are greeted with a series of tasty BBQ treat platters to delight you.
This is followed by a main meal comprising the most delicious pulled pork you have ever experienced either on a roll with coleslaw or as part of a served meal. Paired with Brisket, sides and salads you will be amazed.
This is the ultimate BBQ experience.
